Inside the Golden Knights' Pregame Show

The prime rib sandwich is back at T-Mobile Arena. After three years off the menu, the Vegas Golden Knights and arena food partner Levy Restaurants brought it back for the team's 10th season, and they added a lineup of new eats, including sushi you push up out of a Golden Knights tube like an ice cream push-pop.

If you have tickets to a game this season, you will notice the changes at the stands. There is a new chopped cheese sandwich, a new burger called the Gambler Burger, prime rib nachos, churro and cookie dough carts, and two new food vendors. One of those vendors is a barbecue spot from Henderson. Season ticket holders who have been around since the first season also get a free upgrade on their drink and popcorn.

Here is the full rundown of what is new, where to find it, and a few tips for making game night easier on your wallet and your schedule.

What Happened

The Las Vegas Review-Journal's Mick Akers reported on the new menu on Sept. 29, 2026, the same day the Golden Knights opened Season 10 at home against the Chicago Blackhawks. The biggest news for longtime fans is the return of the prime rib sandwich. It was on the menu when T-Mobile Arena first opened, then went away for the last three seasons.

Anjo Lopez, the executive chef for Levy at the arena, told the Review-Journal the sandwich is a throwback. "We have the prime rib sandwich, which is a throwback to when we opened the stadium 10 years ago," Lopez said. He said the sandwich is on level 2, and prime rib nachos are on level 4. "Nothing more Las Vegas than prime rib, right?" he said.

The item that will get the most photos is the new sushi pop. The sushi sits inside a Golden Knights-branded tube that works like a push-pop ice cream. You push the sushi up with a plastic straw that holds the sauce. The container reseals, so you can put it down when the Knights score and pick it back up later. The roll is made with tuna poke, grilled pineapple, edamame and cucumber.

Two more new items are headed to stands around the arena:

  • Chopped cheese sandwich: ground steak, lettuce, tomato, onion, mustard, mayonnaise and ketchup on a hoagie roll.
  • The Gambler Burger: an Angus beef patty with smoked applewood bacon, American cheese, crispy onion and a Korean-inspired "crack sauce."

Themed nights will get their own special food items through the season. One of the first is Filipino Night. That night's Filipino Special is a sandwich on a black bun with crispy lechon, umami aioli, pork crackling and pickled papaya.

For fans in The Tower Club at T-Mobile Arena, the upscale menu includes a Tower Sampler with chips and dips, Cuban sliders, Wagyu beef sliders and Korean fried chicken.

New vendors: Prince St. Pizza and a Henderson barbecue spot

T-Mobile Arena added two new food vendors this season: Prince St. Pizza and SMKD BBQ, which is based in Henderson. SMKD BBQ will serve brisket and pulled pork sandwiches, a cauliflower steak sandwich for vegans, house-made chips, banana pudding and a loaded cookie.

Gene Samuel, general manager at SMKD BBQ, told the Review-Journal the goal was something "off the beaten path, but it's still authentic." He said he is excited to share his barbecue with more people, especially fans heading to a game.

Sweets, new vessels and a gift for Day 1 fans

If you have a sweet tooth, look for the churro and cookie dough carts. The churros come with cinnamon sugar, chocolate sauce and dulce de leche. The cookie dough comes in several flavors, including chocolate chip and Thin Mint, with toppings.

The team is also leaning into novelty containers again. Last season, chicken tenders came in a Zamboni-shaped container, and it was a hit. This year, the branded sushi pop tube is the new vessel. Later in the season, hockey mask and goalie glove vessels are set to show up too.

Fans who have held season tickets since Season 1 get a perk. If they show proof at concessions, they receive a special Day 1 drink cup and popcorn bucket. Bob Bilodeau, vice president of hospitality and strategy with Levy, explained it this way: "It's a free upgrade. You go from a 22-ounce soda to a 32-ounce soda, and you go from a 46-ounce popcorn to an 85-ounce popcorn. No additional charge."

One thing the announcement did not include: prices. The Review-Journal story did not list what the new items cost, so check the menu boards when you get there.

Why It Matters to Las Vegas Residents

Golden Knights games are not a tourist thing. They are a local thing. The people in those seats on a Tuesday night in October are mostly folks from Henderson, Summerlin, Spring Valley, North Las Vegas and every neighborhood in between. For a lot of families, a game is a planned night out, and food is a big part of the budget and the fun.

That is why the menu matters. If you are bringing kids, you want to know there is something beyond a hot dog. If you have a vegan in the group, the cauliflower steak sandwich from SMKD BBQ is now an option. If you go to a lot of games, new items keep it from feeling like the same night on repeat. And if you have been a season ticket holder since the first puck drop, the Day 1 cup and bucket is a small thank-you that actually saves you money over a season.

There is also a local business angle. SMKD BBQ is based in Henderson. Getting a stand inside T-Mobile Arena puts a valley business in front of thousands of people every home game, including visiting fans who fly in to see their team play in Las Vegas. That kind of exposure can help a local restaurant grow, and when a local spot grows, the money tends to stay closer to home.

The menu also has more range than it used to. In one arena you can now get sushi, pizza, barbecue, a chopped cheese, a loaded burger, prime rib, churros and cookie dough. That matters when you are trying to feed a group with different tastes. It means fewer arguments in the concourse and more time watching the game.

It also fits a pattern that locals will recognize. The Golden Knights have always tried to make game night feel like a Las Vegas show, not just a hockey game. Chef Lopez said as much: "Just like the Golden Knights every year we want to be better, also, we want to make sure the fans get something that only they have, because being the Golden Knights, we're Las Vegas, we have to always show out." The food is part of that same idea as the pregame show and the Golden Knight's battle on the ice. You can read more about the show in our story on the Golden Knights' pregame show.

Background and History

T-Mobile Arena sits at 3780 S. Las Vegas Blvd., just off the Strip. Chef Lopez described the arena opening about 10 years ago, and the prime rib sandwich was part of that first menu. The Golden Knights arrived a short time later, and this fall starts their 10th NHL season. That is why you will hear "Season X" all year long, with the team building nostalgia into everything from the pregame show to the food.

The return of the prime rib sandwich is a good example. It was not a brand new idea. It was a fan favorite that went away for three years and came back because it ties the arena to its early days. For fans who have been going since the start, it is a small bit of history on a bun.

Novelty food containers have become a thing at Golden Knights games too. Last season's Zamboni container for chicken tenders did well enough that the team is building on it this year with the sushi pop, followed by the hockey mask and goalie glove vessels later in the season. These are the kinds of items people post on social media, which helps spread the word about the team and the arena.

Themed nights are another piece of the puzzle. The Golden Knights plan a slate of theme nights each season, and food specials now tie into them. Filipino Night is one of the first with a special sandwich this year. For the full list of theme nights on the schedule, see our story on Golden Knights Season X theme nights.

What Happens Next

Most of the new items are already on the menu now that the regular season has started. The opening game against Chicago on Sept. 29 was the first chance for fans to try the new lineup. The Review-Journal also reported the team's full new pregame show debuts Friday against Anaheim, so this week is a good time to see the new season's game night experience all at once. We wrote about opening night in our story on Wayne Newton kicking off Season X.

A few things are still on the way. The hockey mask and goalie glove vessels are set for later in the season, though no dates were given. Theme night food specials will roll out one at a time as those nights come up on the schedule. If you want the Filipino Special or another theme night item, plan your game around that night.

Keep an eye on the Golden Knights and T-Mobile Arena channels for announcements. Menus at big arenas often shift a bit during a season, with items added or swapped based on what sells. If you try something you love, it does not hurt to go early in the season while it is sure to be there.

Ryan's Take

I talk to a lot of buyers who are moving to Las Vegas, and one question comes up more than you would think: what do locals actually do here? Golden Knights games are near the top of my answer. The team gave this valley something to rally around, and a game at T-Mobile Arena is one of the best nights out in town. A new menu is a small thing, but it shows the team keeps investing in the local fan experience a decade in.

I also love seeing a Henderson business like SMKD BBQ get a spot inside the arena. That is good for the southeast valley, and it is the kind of local success story that makes neighborhoods feel like communities. And the arena sits right off the Strip, central enough that fans from Summerlin, the southwest valley, Henderson and North Las Vegas can all make a weeknight game work. When I help families pick a neighborhood, I always ask about their weekends. For a lot of them, hockey is part of that answer.

What You Can Do

Plan your food stops. The prime rib sandwich is on level 2 and the prime rib nachos are on level 4. If you want either one, check which level your seats are on before you go so you are not hunting between periods. The sushi pops, chopped cheese and Gambler Burger are spread across concession stands in the arena.

Know the arena rules. T-Mobile Arena's A-Z guide says no bags or backpacks are allowed except small personal bags up to 9 by 5 by 2 inches. Outside food and drinks are not allowed, and the arena has a no re-entry policy. Check the arena's A-Z guide before you go for current payment options. Leave the big bag at home and have a card or your phone ready.

Claim your perk if you have it. If you have held Golden Knights season tickets since Season 1, bring proof to the concession stand to get the Day 1 cup and popcorn bucket. It is a free size upgrade, so it pays to ask.

Pick your night with food in mind. Theme night specials only show up on their theme night. If a special like the Filipino Special sounds good, match your tickets to that game. If you just want the classics, any home game works, since the prime rib sandwich, sushi pops and new burgers are part of the regular menu this season.

Eat before the rush. This is common sense for any big arena, but it helps. Lines at the stands tend to be longest right before puck drop and during intermissions. If you want to try something new, like the sushi pop, getting it earlier gives you time to find your seat and enjoy it without missing a goal. And because the sushi pop container reseals, you can set it down during a big play and finish it later.

Share with the group. A lot of these items are built for sharing. The prime rib nachos, the SMKD BBQ chips and the churros all work well split between two or three people. If you are bringing a family of four, splitting a few items can let everyone try something new without ordering four full meals.

Try the local option. If you want to support a valley business, look for SMKD BBQ's stand and try the brisket, pulled pork or cauliflower steak sandwich. And if the kids need a treat, the churro and cookie dough carts are there too.
