Echo and Rig is a modern steakhouse and butcher shop located inside Tivoli Village at 440 S. Rampart Blvd., roughly half a mile from the Queensridge community. Founded by chef and restaurateur Sam Marvin, Echo and Rig combines a working butcher shop with a full service restaurant, offering an experience that stands apart from traditional steakhouses in the Las Vegas valley. The restaurant has earned a strong following among Queensridge residents and west Las Vegas diners since opening.

The Butcher Shop Concept

What distinguishes Echo and Rig from other steakhouses is the in house butcher shop visible from the dining room. Meats are hand cut on site daily, and the butcher counter is open to the public for retail purchases. Guests can buy premium cuts to cook at home or watch the team prepare the same steaks served in the restaurant. Sausages are made fresh daily in the shop, and the rotating selection of specialty cuts gives regulars a reason to return frequently.

Menu Highlights

The menu at Echo and Rig features over 90 items, anchored by wood fired steaks cooked over an open flame. Beyond the main cuts, the kitchen serves shareable plates like pork belly burnt ends, portobello fries, and fresh day boat fish. Salads, house made pastas, and seasonal sides round out the offerings. The cocktail program includes craft drinks, and the wine list leans toward bold reds that pair with the steak forward menu. Weekend brunch, served Saturday and Sunday from 10:00 a.m. to 3:00 p.m., adds another dimension with items like fresh pressed juices and brunch specific entrees.

Lunch is available Monday through Friday from 11:00 a.m. to 3:45 p.m. Dinner runs Monday through Thursday and Sunday from 4:00 p.m. to 10:00 p.m., and Friday through Saturday from 4:00 p.m. to 11:00 p.m. Reservations are strongly recommended, particularly for Friday and Saturday evenings, as the restaurant fills quickly.

Tivoli Village sits immediately east of the Queensridge community along S. Rampart Blvd. The drive from most Queensridge homes to Echo and Rig takes under two minutes.
